Most of the region's top producers age both white and red wines in French oak barrels, typically for 12 to 15 months. However, the proportion of new oak is carefully controlled (usually 20–30%) to ensure that the barrel aromas do not overpower the delicate fruitiness of the grapes.
Oak-aged white wines are recommended to be served slightly warmer than usual—around 11–13 °C—to reveal their creamy texture and complexity. The reds are best served at a temperature of 15–17 °C.
