The Magic of Oxidative Aging

This is certainly no ordinary white wine. According to strict Château-Chalon regulations, the beverage must be aged in oak barrels for a minimum of six years and three months. During this time, the barrels are not topped up, allowing some of the wine to evaporate (the "angel's share"). A natural film of yeast (the voile) forms on the surface, protecting the liquid from turning into vinegar while allowing slow, controlled oxidation. This process gives the wine its unmistakable nutty, slightly spicy, curry-scented character.

The Traditional "Clavelin" Bottle and Food Pairings

Because of the extended aging and evaporation, one liter of grape juice yields exactly 620 ml of wine. This is precisely why this masterpiece is sold in distinctively shaped, historical 62 cl bottles known as Clavelin. Gastronomically, Château-Chalon pairs flawlessly with locally aged Comté cheese, poultry dishes in rich cream and morel mushroom (morilles) sauces, and spicy Asian curries. It is a bold wine for cheese and for those seeking unconventional flavors.

How long can this "Yellow Wine" age?
Château-Chalon is among the most age-worthy wines in the world. Thanks to its specific oxidative production process, this wine can easily mature in a cellar for 50, 100, or even more years without losing its exceptional quality.

Do I need to finish the bottle immediately after opening?
No. Because the wine has already undergone an intense oxidation process in the barrel, oxygen does not harm it the way it does regular wines. An opened bottle can safely be kept and enjoyed over several weeks or even months.

At what temperature should it be served?
Although it is a white wine, it should not be served too cold. The ideal serving temperature is around 14–15 °C. It is also highly recommended to open the bottle a few hours before tasting to let the wine breathe.
