Climate and wine character

The Roussillon region is one of the sunniest and driest areas in all of France. With over 300 days of sunshine a year, the grapes reach optimal—often extreme—levels of ripeness. However, cool winds blowing down from the nearby Pyrenees mountains prevent them from "baking" and help retain essential acidity. The diversity of soils, ranging from granite and schist to clay and limestone, allows local winemakers to craft complex wines that delight with a full body, generous alcohol levels, and a deeply rich aromatic bouquet.

Food pairing

The rich red wines of this appellation demand intensely flavored cuisine. They pair ideally with roast beef, lamb stews infused with rosemary, spicy charcuterie, and grilled meats. The whites and rosés are fantastic matches for Mediterranean cuisine, tapas, paella, and baked fish.

How does Côtes du Roussillon differ from Côtes du Roussillon Villages?

Wines holding the Villages status hail from a specific northern part of the region where the soil is rockier and the vineyards stretch across hillsides. As a result, these wines are typically even more concentrated, complex, and better suited for extended oak aging.

Should red wines from this region be decanted?

Yes, especially if the wine is young and powerful. Opening the bottle and transferring it to a decanter for about 45 minutes will soften the perception of alcohol and firm tannins, allowing the rich berry aromatics to fully emerge.
