How to Choose Primitivo di Manduria DOC Wine

Drinks from this region are characterized by pronounced power and concentration. When making your choice, pay attention to the aging duration, which significantly alters the wine's profile.

By Aging Style

The classic version delights with vibrant fruitiness and jammy notes. If you are looking for greater complexity, opt for "Riserva" wines, which are aged longer in oak barrels, acquiring deep aromas of vanilla, dark chocolate, tobacco, and roasted nuts.

Food Pairings

Due to its natural hint of sweetness on the finish, lower acidity, and powerful body, Primitivo pairs wonderfully with intensely flavored food. It is an indispensable partner for grilled pork, BBQ ribs, spicy meat stews, roasted lamb, and hard, aged cheeses.

Frequently Asked Questions (FAQ)

Why does this wine have a natural sensation of sweetness?

The Puglia region, especially around the town of Manduria, has a very hot and dry climate. Under these conditions, Primitivo grapes accumulate a very high amount of natural sugar, and sometimes the berries even shrivel slightly on the vine. Even when the wine is fermented to dryness, the high alcohol content and immense concentration of ripe fruit create a smooth, pleasantly sweetish finish.

What is the relationship between Primitivo and Zinfandel grapes?

Genetic studies have proven that Italy's Primitivo and California's highly popular Zinfandel are the exact same grape variety, historically originating from Croatia (where it is called Tribidrag or Crljenak Kaštelanski). Although the DNA matches, due to differences in climate and soil (terroir), the Italian version typically has more earthy, savory notes and a firmer structure.
