The secret to producing these wines is the mutage process, where neutral grape spirit is added to the fermenting grape must. This stops the fermentation, leaving natural residual grape sugar in the wine while raising the alcohol content to 15–17%. Rivesaltes wines are then aged for years—or even decades—in glass demijohns under the sun or in oak barrels. Through this exposure to oxygen (oxidation), they develop an exceptional amber hue and profound depth.
