The landscape and climate of Santorini are extreme: constant gale-force winds, scorching sun, and virtually no rainfall. Yet, in this harsh soil saturated with volcanic ash, pumice, and lava rock, the vines find a way to thrive. Local winemakers use the unique Kouloura method, training the vines into low, basket-like wreaths that rest on the ground. This "basket" protects the grapes from the fierce winds and traps the morning dew, which is often the vines' only source of moisture.

In addition to dry wines, Santorini PDO also produces the legendary sweet Vinsanto. After harvest, the grapes are sun-dried for about two weeks. The result is a viscous, incredibly sweet wine smelling of raisins, figs, honey, and caramel, yet perfectly balanced by the signature Assyrtiko acidity.
Absolutely. While Assyrtiko is wonderfully crisp when young, its unusually high acidity and volcanic backbone allow the wine to successfully evolve in the bottle for 5 to 10 years. With age, richer notes of honey and toasted nuts develop beautifully.
