These berries are gathered in large vats where, under their own weight and without any mechanical pressing, they release a thick, syrup-like liquid. This dripping nectar is the Eszencia. Because of the massive sugar concentration (often exceeding 450–600 g/l or even more), it becomes exceedingly difficult for yeast to survive. Fermentation occurs very slowly and can last for several years, with the final alcohol volume reaching only a mere 2–5%.
In the glass, Eszencia appears as a viscous, dark amber syrup. The aroma is astoundingly intense—intertwining honey, apricot jam, orange peel, caramel, black tea, and oriental spices. Although the sugar content is extreme, it is perfectly balanced by the equally extreme, crisp acidity characteristic of the Furmint grape. Traditionally, this Hungarian masterpiece is tasted not from glasses, but from special crystal spoons, allowing the concentrated drops to slowly coat the palate.
