White dry
The juice of hand-picked and carefully selected grapes is fermented and aged in French oak barrels, some of which are new. Malolactic fermentation is partial.
A wine of yellowish-green hue with aromas of yellow apples, pears, and orange peel. Velvety in texture and oily on the palate, with flavours of white peach, apricot, and lemon tree essence, balanced by a refreshing, mineral acidity.
Serve at 10–12 °C with richer fish such as halibut or cod, grilled chicken or salmon steak.
Jan and Caryl Panman travelled the world for work and pleasure before finding their bliss in Limoux. In 2001 they took the plunge and purchased the 22 hectare Château Rives-Blanques (named after one of the Pyrenean peaks on the horizon). Aided by Eric Vialade, who has run the estate for 30 years, and Pierre Roque, their consulting oenologist, they are making some of the purest, most mineral wines in the area. Now their children are taking a larger role, Jan-Ailbe as the winemaker-in-waiting, Xaxa on the commercial and promotional side.
