De Martino Ungrafted Cabernet Sauvignon Maipo Valley 2023 - Growing and maintaining ungrafted vines is a rare privilege. There are few such vines left in the world, and their uniqueness lies in their ability to convey the character of the terroir in its purest form.
The winery team carefully cares for these ungrafted vines, which have been growing for decades according to sustainable farming principles, aiming to create wines that authentically reflect the area of origin.
After manual selection of the grapes, they are transferred to stainless steel tanks, where they undergo 10 days of cold maceration before spontaneous fermentation with indigenous yeasts begins.
The wine is aged for 12 months in French oak barrels, and is only lightly filtered before bottling, so it remains naturally opaque and rich.
The aroma reveals notes of red and black currants, tobacco leaves and graphite. Taste: medium-bodied, fine tannins, ripe fruit intensity, crisp acidity leading to a long, balanced aftertaste.
Serve at 16-18 °C with wild poultry, meat and vegetable stews, red meat stews, medium-hard cheeses.
