White dry
A sublime pale gold colour with emerald reflections titillates our senses. On the nose this Chardonnay is distinguished by notes of white flowers, acacia, hawthorn, lemon and grapefruit. In the mouth, the entry is crowned by a delicious marriage between tension and flesh. A salty lightness of touch is gracefully linked with the body right across the palate and leaves subtle spicy aromas at the finish. Drink now or over 5-10 years depending on the vintage.
Serve at 8-10°C with a dish of red mullet with fennel, or rabbit with tarragon. It would be equally fine with foie gras either pan-fried or in a terrine, or with shellfish.

Winemaking Methods
Jean-Pierre Guyon's style stands out for minimal intervention combined with solid technical decisions. A 100% whole-cluster fermentation is applied to red wines, giving the drink complex floral aromas and a silky tannin structure. No added sulfites are used during fermentation, and the wines are patiently aged in French oak barrels to achieve a perfect balance between fruitiness and oak spices.
Vineyards and Appellations
The estate owns exceptional plots in the Côte de Nuits and Côte de Beaune regions, including the renowned Vosne-Romanée, Gevrey-Chambertin, Nuits-Saint-Georges, and Echézeaux Grand Cru appellations.
