Thin slices of fresh Italian bianchetto truffle (Tuber borchii Vitt.) preserved in oil — a way to enjoy truffle aroma all year round, not only during the short fresh-truffle season. The bianchetto grows in the woods of Umbria and Le Marche; its aroma is pronounced and garlicky, with notes of fresh mushroom and damp earth.
The slices need no cooking — add them straight onto the finished dish, about a teaspoon per person. Excellent with pasta and risotto, scrambled eggs and omelettes, beef carpaccio, bruschetta, pizza and aged cheeses.

Store in a cool, dry place away from direct sunlight. Once opened, cover with oil, keep refrigerated (+2 to +4 °C) and consume within 5–7 days.
