Graziano Prà Colle Sant’Antonio Soave Classico BIO 2020 is one of the examples of a more mature, deeper and gastronomic Soave, in which the classic ‘Garganega’ variety acquires not only fruitiness, but also a more serious structure. The wine comes from Monteforte d’Alpone, in the Soave Classico zone, is made from 100% ‘Garganega’ grapes, and its style is shaped by a later harvest and long maturation in oak. This is not a light everyday Soave, but a more solid, more layered white wine, which combines mature fruit expression, texture and longer maturation potential.
The aroma reveals notes of ripe yellow fruits, reminiscent of peach and apricot, complemented by nuances of cinnamon, fresh vanilla, acacia and chestnut honey. The aroma is ripe, rich, but not heavy – it retains the typical Soave cleanliness, only here it is complemented by a warmer, more developed aromatic layer.
The wine is broad, concentrated and round, but the acidity maintains balance and prevents it from becoming too heavy. Hints of sweet roasted almonds and candied apricots stand out in the aftertaste, and oak aging provides additional depth, a soft texture and a longer aftertaste. This is a white wine that relies more on mature harmony and layering than on crispness.
Terroir is very important for the character of this wine: the vineyards are located at an altitude of 150-250 meters, on volcanic soil, and older vines, 50-70 years old, help to achieve greater concentration and depth. In the context of Soave Classico, this is important because the volcanic origin not only provides ripe fruit, but also an internal tension that maintains the structure of the wine even when the style leans towards a richer, longer-matured side.
A special technique is used in the winemaking: the ‘Garganega’ shoots are cut in September, the bunches are left to dry on the vine for about a month, and the harvest is only harvested in mid-October. After a gentle pressing, the wine is fermented and aged for up to 18 months in 30 hl Allier oak barrels. It is this combination – partial drying on the vine and long maturation – that gives the wine its richness, roundness and expressive, mature Soave style.
Serve at a temperature of 10-12 °C with "Venetian liver", fried sardines, eggs Benedict with truffles, and mature cheeses.
Graziano Prà, who has led Azienda Agricola di Graziano Prà since 1980, continues the long-standing winemaking traditions of his family, passed down from his father and grandfather. He has devoted his life to viticulture in the village of Monteforte d’Alpone, an area renowned for its volcanic soils in the Soave Classico DOC zone of the Veneto region.

Graziano Prà has also taken on the challenge of cultivating the La Morandina vineyard in the Mezzane Valley of Valpolicella. Managed according to ecological principles, this site yields intense and characterful red wines. His goal is to produce sustainable, environmentally responsible wines while maintaining a natural balance between soil, vine, and human intervention.
