Winemaking conditions on the island of Santorini are extreme: there is almost no rain, strong winds blow constantly, and the soil consists of volcanic ash, pumice, and basalt. To protect the grapes, local winemakers weave the vines into special baskets on the ground called kouloura. This harsh microclimate helps create beverages of exceptional concentration.
