Raicilla is distilled on the eastern coast of the state of Jalisco. Less than 10 years ago, this drink was added to the official list of Mexican spirits, although it has been distilled for centuries, but always informally.
Raicilla is distilled from various, mostly wild, agaves ('Maximiliana', 'Rhodacantha', 'Cenizo' or others), which grow for up to 15 years before being cut. This raicilla is 100 % Amarillo / Chico aguiar agave.
Roasted agaves are fermented in open vessels, into which fruit and leaves from the surrounding plants often fall, lending the fermenting drink and the future distillate exotic aromas that explode in the mouth. Raicilla is characterised by aromas of ripe mangoes, thyme, honey, orange marmalade and freshly cut grass, which pair perfectly with white fish dishes, oysters, crab and lobster.
In the aroma – an intriguing combination of gravel, rubber tyres and old wood smoke, alongside notes of fruits, sweet spices, herbs, slightly bitter green leaves and farm.
On the palate, the raicilla is mineral, sweeter and softer than on the nose. White pepper, orchard fruits, menthol and mint, and aniseed dominate.
The finish is sweetish, smoky, with notes of lemon, green leaves and menthol.
