Mexican laws strictly regulate tequila production – true tequila can only be made from 100% blue agave (Agave Tequilana Weber Blue) and only in five states, of which Jalisco is the most important and famous. The region's terroir is divided into two main zones (Highlands and Lowlands), which shape different flavor profiles:
Premium 100% agave tequila (especially aged Reposado or Añejo) is best tasted neat, from a tulip-shaped glass, slowly enjoying the aromas, much like cognac or whisky. It pairs perfectly with spicier Mexican cuisine dishes, and will ideally complement seafood snacks, such as ceviche. Lighter styles are an indispensable base for top-class Margarita cocktails.
What does the "100% Agave" label mean?
This is the most important quality indicator. It means all the alcohol in the beverage is derived exclusively from blue agave. If this label is absent, the beverage is a so-called Mixto, to which other sugars (usually cane) have been added, which reduces the quality.
What is the difference between Blanco, Reposado, and Añejo?
Blanco (or Silver) is unaged tequila that most purely reflects the taste of agave. Reposado is aged in oak barrels from 2 to 12 months, gaining smoothness and vanilla notes. Añejo is aged from 1 to 3 years, and Extra Añejo – for more than 3 years, becoming highly complex and dark.
