Description

The wine is made from old Syrah vines grown in the tradition of organic winemaking. Grape juice is fermented in new 400-liter French oak barrels. The maceration process lasted 25 days. At the end of the alcoholic fermentation, the wine was transferred to new barrels produced in the Allier region, which were stored for 13 months. was matured. The deep ruby-colored wine with a purple border has an intense and at the same time complex aroma, with ripe mulberry berries, dark plums, leather and dried tobacco. Expressive notes of dark chocolate bitterness, sweet tobacco and vanilla are given in the mouth. This counterbalances the acidity and ripeness of the wine.

Serving recommendations

Serve at 16-18 ° C with marinated red meat dishes, rich stews with game.

About brand

Parés Baltà is a historic, family-owned winery founded in 1790, located in the Pacs del Penedès area, between the Mediterranean Sea and the hills of Catalonia. It is one of the clearest examples in Spain of how deep-rooted tradition can be consistently combined with progressive, environmentally driven viticulture based on organic and biodynamic principles.

Family heritage and continuity

Today, the winery is led by the third generation of the family – Joan and Josep Cusiné – working closely with their father, Joan Cusiné Cusiné. Here, the family model is not symbolic but a living, everyday practice that ensures long-term vision, stylistic consistency, and continuity across generations.

Organic and biodynamic philosophy as a foundation

Parés Baltà is:

  • organically certified since 2002
  • biodynamically certified (Demeter) since 2012

Sheep graze in the vineyards, naturally fertilising the soils, while beehives help maintain biodiversity. The estate functions as a closed ecosystem, where soil, plants, and people interact harmoniously – without synthetic chemicals and with deep respect for the Mediterranean environment.

Terroir diversity and altitude

Parés Baltà’s vineyards range from 170 to 750 metres above sea level, allowing:

  • the use of diverse microclimates
  • soils ranging from limestone to clay
  • some parcels planted on centuries-old terraces, a rare feature in the region

This diversity enables the production of wines with a clear sense of origin and natural structural balance.

Creativity-led winemaking

The wines are crafted by Maria Elena Jiménez and Marta Casas – the wives of Joan and Josep. Their partnership has become one of Parés Baltà’s defining characteristics, combining traditional Penedès knowledge with creativity and a modern sensitivity to terroir.

In 2024, Marta Casas was named “Winemaker of the Year” in Tim Atkin MW’s report, an international recognition of the entire team’s work.
