Planeta Controdanza Rosso BIO 2021 - The “Controdanza” is a traditional village dance in which the dancers move elegantly in a way of opposition and agreement. We thought of this when combining Nero d’Avola and a small amount of Merlot grown in the white lands of Noto. This is not a typical blend, everything is based on contrast, not similarity. It was created as a classic “second wine” from vines that do not reach the achievements of the Santa Cecilia wines, although they grow in the valleys surrounding the Buonivini winery. These are the lowest areas of the valleys, where the fruit acquires the typical balsamic character of Nero d'Avola in the calcareous soils of Noto."
The aromatic profile shows a direction of ripe plums and darker fruits, accompanied by balsamic notes, bay leaves, hints of incense and tones of Mediterranean vegetation.
The wine is medium-bodied with a clearly perceptible ripeness, but maintains balance thanks to fresh acidity and smooth tannins.
The grapes are hand-harvested at the end of September. After being brought to the cellar, they are separated from the stalks, gently pressed and fermented in stainless steel tanks for 7-8 days, with short pump-overs to keep the skins intact. After fermentation, the wine is kept on the skins for another 15-18 days, then malolactic fermentation takes place, and aging lasts 12 months in used Allier oak barrels.
Serve at a temperature of 16 - 18 °C, with expressive pork dishes and fish with a strong flavor.
