Read moreThis brewery distinguishes itself through several fundamental production principles. All of their beverages belong exclusively to the highest Junmai (no added distilled alcohol) category. They use local, highly pure mountain water and heavily polished, top-grade Yamada Nishiki rice. However, their biggest secret is long aging at low (often sub-zero) temperatures for one to five years or even longer. This gives the sake incredible smoothness, aromatic complexity, and a rich body.
