This boutique wine estate operates under strict natural farming principles. Every bottle is the result of meticulous manual labor, with the producer (Kakha Tchotiashvili) personally overseeing the entire process. The wine is made the ancient way: grape juice, along with skins, seeds, and stems, is fermented in clay Qvevri vessels buried underground. Due to prolonged skin contact, white grapes (e.g., Rkatsiteli, Mtsvane, Kisi) transform into a unique amber (orange) wine.
Amber wine possesses the freshness of white wine but has the structure and tannins typical of red wine. It is dominated by aromas of dried apricots, wild herbs, honey, tea, and spices. It is a highly complex and age-worthy beverage.
Due to their strong tannic structure, Qvevri wines are among the best gastronomic companions. Amber wine pairs perfectly with traditional Georgian dishes (khachapuri, pkhali), richer fish, poultry, or food seasoned with oriental spices. The red (Saperavi) wines wonderfully complement charcoal-grilled lamb and aged cheeses from our wine snacks selection.
What is a Qvevri?
It is a large clay vessel resembling an amphora, which is buried underground to maintain a stable temperature during wine fermentation and aging. This method is included in the UNESCO Intangible Cultural Heritage list.
At what temperature should amber wine be served?
Amber wine should not be over-chilled. It is best enjoyed at 12–14 °C to fully reveal its complex aromas without hardening the tannins.
