It produces light and fresh white wines, traditional amber (orange) wines, as well as excellent sparkling wines. However, for those seeking true authenticity, it is essential to taste wine made the traditional Georgian way—fermented in clay Qvevri vessels with the skins. This amber wine will be significantly more viscous, have noticeable tannins, and deep aromas of dried apples and walnuts.
Due to the wide variety of styles, Chinuri pairs with many dishes. A fresh European-style or sparkling Chinuri is a perfect aperitif, excellently matching white fish and green salads. Meanwhile, the structured, amber Qvevri wine will boldly withstand rich traditional Georgian dishes: cheese bread Khachapuri, chicken in walnut sauce (Satsivi), and grilled pork.
The word "Chinebuli" in Old Georgian means "excellent" or "the best." According to another version, the name "Chini" means a greenish-yellow, olive color, which perfectly describes the hue of ripe Chinuri berries. In both cases, this name emphasizes the exceptionally high value of the variety in local winemaking.
This variety is highly valued for its naturally high, crisp acidity and ability not to raise the alcohol level too high—these are ideal characteristics for premium sparkling wine production. The best Georgian sparkling wines (made using the traditional, champenoise method) are usually created exactly on the basis of Chinuri grapes.
