Due to its naturally high acidity, Lalvari grapes are perfectly suited for producing both classic still and sparkling wines. Still Lalvari wines, fermented in stainless steel tanks, delight with crisp minerality and spring-like fruitiness without the influence of oak. Sparkling versions (made using the traditional method) feature fine bubbles, freshness, and an elegant texture ideal for festive occasions.
This light and refreshing wine is a perfect aperitif, excellently preparing the palate for dinner. It pairs wonderfully with light white fish dishes, fresh salads, soft cheeses, and roasted poultry. Thanks to its subtle florality and citrus notes, Lalvari wine also pairs surprisingly well with mildly spiced Asian cuisine.
Lalvari grapes grow best in a cooler mountain climate, especially in Northeastern Armenia (the Tavush region). Unlike other grapes in the country that ripen in hot and dry valleys, Lalvari is adapted to the more humid and cooler forest zones located high in the mountains. This allows the grapes to ripen slowly and maintain crisp, refreshing acidity.
Mostly, Lalvari wines are designed for quick consumption. Their greatest strength lies in their freshness, lightness, and primary fruit and floral aromas. It is recommended to drink the wine young, within 1–3 years of the vintage. Extended cellaring might dampen these fragile, subtle scents.
