Quality Malmsey wines always state their aging duration (e.g., 5, 10, 15 years, and longer). Top-tier wines are aged using the traditional Canteiro method—oak barrels are left in warm winery lofts for many years, where the wine slowly oxidizes and concentrates in the natural heat. Such wines acquire incredible complexity, smoke, wax, and burnt sugar notes. The older the wine, the more complex and smoother it becomes.
Due to its pronounced sweetness and, most importantly, the very high and cleansing acidity characteristic of Madeira wines, Malmsey is a perfect dessert wine. It pairs flawlessly with dark chocolate, coffee and nut desserts, caramel, and fruitcakes. It also serves as an excellent cigar companion or stands in for the dessert itself after a hearty dinner.
Despite the very high residual sugar content, Malmsey is never overly "sticky" or cloying on the palate. The main characteristic of Madeira wines is their unique, cutting volcanic acidity. Madeira wines (including Malmsey) are considered practically indestructible. Since the wine is already deliberately oxidized and "baked" (heated) during production, time, oxygen, or light no longer negatively affect it. Even an opened bottle can stand for months or even years without any risk of losing quality. Meanwhile, unopened bottles in a cellar successfully survive for centuries.
