As a single-varietal drink, Ruby Cabernet impresses with an extremely dark ruby color, blackberry and black cherry fruitiness, and earthy notes characteristic of Cabernet Sauvignon. However, this variety is very often used as a blending base, providing color and softer tannins than traditional Cabernet, making such wines easier to drink and quicker to mature.
Thanks to its balanced acidity and medium tannin level, this wine is a great partner for everyday gastronomy. It pairs ideally with grilled meats, burgers, BBQ ribs, and tomato-based pasta dishes. It is also a good choice with medium-aged cheeses.
Ruby Cabernet was created in 1936 by Dr. Harold Olmo, a famous scientist at the University of California (UC Davis). His goal was to breed a variety that could thrive in the exceptionally hot climate of California's San Joaquin Valley. It inherited deep aromas from Cabernet Sauvignon and immense heat tolerance and high yields from Carignan.
Unlike classic Cabernet Sauvignon, Ruby Cabernet does not have the strict tannic and acidic structure necessary for long-term aging. It is a wine that best reveals its rich, jammy fruitiness when tasted young, so it is recommended to consume it within 2–4 years of the vintage.
