The most popular choice is the classic, still dry Schilcher rosé wine, characterized by cutting acidity, a low alcohol level, and a clean, bright color. However, Austrian winemakers also create wonderful sparkling wines (Sekt) and lightly carbonated Frizzante style drinks from the same berries. In the sparkling versions, the acidity is further balanced by the bubbles, creating an incredibly refreshing effect on the palate.
The more aggressive natural acidity makes this wine a perfect partner for richer food. In Styria, it is traditionally served with fatty meat snacks, cured ham, sausages, and roasted poultry. The wine is unique due to its geographical indication. Under Austrian law, the name Schilcher on a label can only be given to rosé wines made exclusively from 100% Blauer Wildbacher grapes grown and processed in the small West Styria (Weststeiermark) region. If the berries are grown elsewhere, the wine does not receive this honorable name.
