How to Choose Tavkveri Grape Wine

This variety is highly versatile, allowing local winemakers to produce drinks in a wide range of styles. When choosing, it is important to evaluate the profile of the wine you are looking for.

Diversity of Styles

Traditionally, Tavkveri is used for light, dry red wines that are excellent when drunk young. Due to its freshness and vibrant berry aroma, this variety is also one of the best in Georgia for producing Rosé and high-quality sparkling wines. If the wine is fermented in traditional clay vessels (Qvevri), it will acquire slightly more earthy tones and tannins.

Food Pairings

Thanks to its light body and good acidity, Tavkveri is incredibly food-friendly. It pairs beautifully with grilled poultry, pork skewers, vegetable stews (especially with eggplant), and traditional Georgian dishes such as Chachokhbili or the cheese bread Khachapuri.

Why was the Tavkveri variety quite rare for a long time?

The Tavkveri vine has only female flowers, meaning it cannot self-pollinate. To bear fruit, it must be co-planted in the vineyard with other hermaphroditic or male varieties (such as Chinuri or Goruli Mtsvane). Due to this complex agricultural requirement, many winemakers previously opted for easier-to-grow varieties, but today Tavkveri is experiencing a true revival.

Is it worth chilling this red wine?

Absolutely! Due to its fruitiness and low tannin content, Tavkveri red wines reveal their elegance best when served slightly chilled (around 14–16 °C). This is especially recommended when tasting the wine during the warmer months.
