Description

One of the most distinctive rosé wines from Clos Cibonne, made from the estate’s oldest 'Tibouren' vines. A blend of 90% 'Tibouren' and 10% 'Grenache', the wine stands out for its richness, structure and ageing potential. Cuvée Caroline reflects Clos Cibonne’s approach to 'Tibouren' – a local Provençal variety to which the estate devotes particular attention.

The nose reveals ripe red fruits, orange peel, spices, honey and subtle exotic notes, complemented by delicate hints of vanilla and oak. On the palate, the wine is rich, powerful and complex, while retaining freshness and good balance. The long finish reveals notes of spices, fruit and gentle vanilla.

The grapes are grown close to the Mediterranean Sea, on the slopes of the Maures Mountains overlooking the Bay of Toulon and the Giens Peninsula. Clay-rich schist soils, a maritime climate and sea breezes give the wine freshness and help preserve the aromatic intensity of the grapes.

The grapes are hand-harvested in the early morning, carefully selected and directly pressed. Fermentation takes place in 300-litre oak barrels, with daily lees stirring (bâtonnage). After fermentation, Cuvée Caroline is aged for 8–10 months in new 300-litre oak barrels.

Serving recommendations

Serve at 10–12 °C. This rosé pairs beautifully with tuna tartare with sesame oil, roast duck with dried fruits, or aged Comté cheese.

Clos Cibonne is a historic Côtes de Provence Cru Classé estate located in Le Pradet, near Toulon. The domaine is distinguished by its commitment to preserving the rare Provençal grape variety Tibouren, which has become the cornerstone of its identity. Unlike most contemporary Provence rosé producers, Clos Cibonne focuses on structured, age-worthy rosé wines where terroir, texture, and gastronomic versatility are as important as freshness.

History and Winemaking Philosophy

The estate's history dates back to the 18th century and is closely linked to Jean-Baptiste de Cibon, a captain in the French Royal Navy. Following the French Revolution, the property came into the hands of the Roux family, who played a key role in preserving and promoting the Tibouren grape. In the early 20th century, André Roux made the strategic decision to focus on this historic Provençal variety, a commitment that contributed to the estate being awarded Cru Classé status in 1955.

Today, Clos Cibonne continues the family's legacy while farming its vineyards according to organic principles. Particular attention is given to soil health, the preservation of old vines, and expressing the authentic character of the estate's terroir.

The Clos Cibonne Style

The hallmark of the estate is Tibouren, a rare Provençal grape variety that gives the wines their distinctive aromatic profile and structural depth.

Clos Cibonne rosés are aged in large oak foudres, while some cuvées spend an extended period under a natural yeast veil (voile). This traditional method adds texture, subtle oxidative complexity, and exceptional ageing potential.

Vineyards and Terroir

The Clos Cibonne vineyards are located near the Mediterranean Sea on the slopes of the Colle Noire massif. The terroir is defined by a combination of clay, limestone, schist, and other geological formations, while the maritime climate helps preserve freshness, natural acidity, and aromatic precision.

Old Tibouren vines provide additional concentration and complexity, making this variety the defining feature that distinguishes Clos Cibonne from other Provence producers.

Ageing Potential

Clos Cibonne wines are crafted for evolution rather than immediate consumption. Thanks to ageing in large foudres and the natural structure provided by Tibouren, the finest cuvées can develop for more than a decade, gradually revealing notes of nuts, dried fruit, spice, and a richer, creamier texture.
