Mascaró Initium Reserva Cava Brut is a classic blend cava made from ‘Parellada’ (60%), ‘Macabeu’ (30%) and ‘Xarel·lo’ (10%). This is a Cava de Guarda Superior Brut of the “Reserva” category, aged for more than 24 months on its lees, which is why this cava combines fresh fruitiness and a more mature, restrained complexity. The dosage is 6 g/l.
The aroma first reveals fresh fruit tones and subtle hints of maturation. In the glass, you can feel a combination of green apple, quince, honeysuckle notes, complemented by a light nuttiness and very gentle nuances of autolysis. The bubbles are fine, and the overall impression is clean, precise and elegant.
On the palate, this cava is balanced and creamy, has enough body, but remains fresh and not burdensome. Longer storage with the lees gives the texture softness and a longer aftertaste. This is a very versatile, well-balanced cava.
Winemaking and style. This cava belongs to the historic Mascaró line - the producer himself states that Initium is their original cava since 1946. The wine is made from their own grapes, and the entire process is controlled from start to finish. Due to the longer than 24 months of aging on the lees, it acquires more structure and creaminess, but maintains a light, pale yellow, lively profile.
