Description

The wine is produced from the Carelle Sous La Chapelle Premier Cru vineyard, located in the northern part of Volnay, close to the border with Pommard. The clay and limestone soils of this climat give Pinot Noir greater structure and minerality while preserving the elegance and aromatic refinement characteristic of Volnay. The estate follows biodynamic viticulture, with winemaking focused on expressing the distinctive character of this specific vineyard as precisely as possible.

The nose reveals aromas of cherries, strawberries and wild raspberries, complemented by rose petals, delicate herbs, black pepper and subtle leather notes. As the wine opens in the glass, additional layers of liquorice, forest floor and fine mineral nuances emerge, adding further complexity.

On the palate, the wine is juicy and fruit-driven, with a medium-bodied structure and silky texture. Vibrant acidity supports the core of red fruit, while fine, precisely integrated tannins provide balance and excellent ageing potential. The long finish is marked by notes of wild berries, spices, liquorice and minerality.

The grapes are hand-harvested and carefully sorted, while the winemaking follows a minimal-intervention approach to preserve fruit purity and the expression of the terroir. The wine is aged in French oak barrels, with a restrained proportion of new oak to enhance texture without overshadowing the character of the fruit.

Serving recommendations

It is recommended to serve at a temperature of 15–16 °C, paired with roasted duck breast, veal loin with mushroom sauce, wild mushroom risotto, Époisses de Bourgogne AOP, or aged Comté cheese.

Armand Heitz is a biodynamic Burgundy wine estate based in Chassagne-Montrachet, actively producing wine under its own name since 2013. After completing his studies in Switzerland and several years of practical experimentation, Armand gradually took over the historic family vineyards, which for many years had been leased to Maison Drouhin, returning them to independent, terroir-focused winemaking.

Working closely with Ludovic Pierrot, long-time winemaker at Domaine Leflaive, Armand Heitz pursues a clear objective: to craft classically styled Burgundy wines where place, aromatic purity, and structural balance take precedence over technique. His philosophy aligns with benchmarks such as Domaine Leflaive and Domaine Ramonet—not through imitation, but through shared values and direction.

The estate follows biodynamic viticulture, prioritising low yields, soil vitality, and natural balance. Oak usage is deliberately restrained, with approximately 15–25% new barrels, ensuring clarity of texture and a transparent aromatic profile rather than overt oak expression.
