White dry
The wine is made from hand-picked grapes growing in soil rich in limestone and silicon dioxide. The south-facing slopes ripen vineyards planted between 1994 and 2004. Fermentation is carried out slowly in oak vessels (500l) until the wine becomes dry (less than 2 g of residual sugar per litre).
A golden-yellow wine with aromas of orchard apples, dried chamomile, and white stone fruits. Due to the meagre soil, the wine takes on a lean, austere character with a perceptible saline edge. A long finish, accompanied by notes of ripe lemons, jasmine, and minerality.
Serve at 9–11 °C with chicken and other white meat dishes, smoked salmon or halibut.
Crafted from vines planted on clay and limestone soils, the 2022 Chinon Blanc reveals aromas of lemon, white flowers, pear and herbs, followed by a medium-bodied, seamless and round palate with a moderately concentrated core of fruit and a delicate tension in the mid-palate complemented by an ethereal, saline finish. It matured 25% in egg-shaped concrete containers and 75% in barrels.
Bernard Baudry, son of a winemakers’ family, started his professional life as a vine-tending consultant at the Tours laboratory, where he worked with Jacques Puisais. He had previously studied oenology in Beaune. His 5 years on the job served as an excellent apprenticeship when in 1975 he decided to start his own estate with 2 hectares of vines. His son Matthieu studied in the Mâcon area, then in Bordeaux, and, after a year working in Tasmania and California, joined his father in 2000. Domain now has 32 hectares of vineyards spread across the AOC Chinon, in Cravant les Coteaux and Chinon.The grape is grown primarily 90% Cabernet Franc (90%) plus a small production of Chenin Blanc. The vineyards are located on very varied terroirs of gravel in the plain, limestone clay on coteau and sandy limestones plateaus. This diversity offers us the possibility of applying piecemeal winemaking.
