Domaine Cazes Rivesaltes Ambré 2016 - a rich and complex naturally sweet fortified wine from the Rivesaltes AOC, revealing the historical “Vin Doux Naturel” style of Southern France.

The aroma reveals notes of dried apricots, dates, figs, orange peel, caramel, honey and roasted nuts, complemented by hints of cinnamon, vanilla, licorice and light oxidative “rancid”.

The wine has a rich, velvety texture, but maintains freshness and a balance between sweetness and acidity. The aftertaste lingers with tones of caramelized citrus, nuts and spices.

The wine is made from ‘Grenache Blanc’ grapes, grown in the clay soils of Roussillon between the Mediterranean Sea and the Pyrenees Mountains. The “mutage” method is used during fermentation - a neutral spirit is added to the must, which stops fermentation and preserves the natural sweetness of the grapes. The wine is then aged for a long time in large old oak foudres under oxidative conditions. This 2016 vintage was aged in oak for about 7 years, giving it an amber color and great aromatic complexity.

Serving recommendations

It is recommended to serve at a temperature of about 12 °C. It goes well with foie gras, blue cheeses, crème brûlée, nut desserts, and dried fruit cakes.

Domaine Cazes – Biodynamic Icon of Roussillon from Rivesaltes

Domaine Cazes is one of the most renowned and historic wineries in the Roussillon region, located in Rivesaltes, between the Pyrenees Mountains and the Mediterranean Sea. The estate was founded in 1895 by Michel Cazes. Today, it is a large, dynamic family-owned domaine run by Emmanuel Cazes and Lionel Lavail.

Since 1997, the winery has been transitioning to organic and biodynamic viticulture, and since 2005 the entire 220 hectares have been certified biodynamic. It was one of the first wineries of this scale to adopt biodynamics in southern France.

Terroir and Vineyards Domaine Cazes owns more than 220 hectares of vineyards in the Agly Valley, at the foothills of the Corbières. The soils are varied — clay-limestone with schist and silica stones. The domaine produces wines across all the major appellations of Roussillon:

  • Côtes du Roussillon and Côtes du Roussillon Villages
  • Maury, Fitou
  • Muscat de Rivesaltes and Rivesaltes (particularly renowned for VDN – vins doux naturels)

Main Grape Varieties: Grenache (all types), Syrah, Mourvèdre, Muscat d’Alexandrie, Muscat à Petits Grains, and others.
