The grapes for this wine are hand-harvested. Fermentation with native yeasts begins in stainless steel tanks and is completed in large oak barrels.
On the nose, the wine reveals fresh fruit and berries (raspberries, cherries) along with savoury leather accents. The palate is complex, refreshing, with a light texture, displaying soft tannins and an elegant finish.
Serve at 15–16 °C with roast duck, goulash or semi-hard cheeses.
Domaine Rolet was founded in 1942 by Désiré Rolet before being passed on to his children. Today, the Domaine's vines average 45 years old and span 65ha across the Jura region of Eastern France, with vineyards in the AOCs of Arbois, Cotes du Jura, l'Etoile, and Chateau-Chalon.Classic Jura varieties are planted across steep slopes on appropriate soils; Chardonnay (light marls), Savagnin (grey marls), Poulsard (red & blue marls), Trousseau (heavy gravels) and Pinot Noir (light marls). Vines are tended through organic farming practices, and hand-harvested each year producing yields between 15-50 hl. Further sorting ensures that only the best quality grapes are seen through to barrel. Most wines are aged for around 18 months in oak, replacing a quarter of their barrels each year. The resulting wines have gained the Domaine a reputation for excellence with wine professionals and drinkers alike with their purity and concentration.
