Description

One of the boldest estates of the new Champagne generation, renowned for its extreme terroir-driven philosophy and natural winemaking approach. Their Coteaux Champenois Blanc “Sous Voile” is an exceptionally rare and experimental wine, in which Chardonnay is aged sous voile (under a yeast veil), echoing the iconic oxidative wines of the Jura region.

On the nose, lemon zest, green apples, white peach and pronounced minerality intertwine. These are layered with notes of hazelnuts, dried apples, white muscat, delicate Fino sherry tones, and a subtle oxidative yeast character, giving the wine remarkable depth and individuality.

On the palate, the wine is dry and tense, with a clearly defined chalky structure and vibrant acidity. The texture is rich yet elegant, recalling Jura Savagnin, but with a more refined Chardonnay-driven precision. The finish reveals citrus oils, saline minerality, nutty nuances, and a delicate oxidative touch. Long, precise, and exceptionally pure.

The grapes come from several plots in Côte des Blancs, where pure chalk and limestone soils impart saline freshness and an exceptionally clean aromatic profile.

The grapes are hand-harvested and gently pressed. Primary fermentation takes place in neutral oak, followed by aging under a yeast veil (sous voile), without topping up (ouillage), allowing a subtle oxidative character to develop. Native yeasts are used, with minimal intervention, often without filtration.

Serving recommendations

Serve at 10–12 °C. Pairs well with Comté cheese, white mushroom carpaccio, gravlax salmon, seafood, or delicately prepared veal.

About brand

Champagne Domaine Vincey is a grower Champagne estate located in the village of Oger Grand Cru, in the prestigious Côte des Blancs region. Here, Chardonnay vines grow on limestone-rich soils, cultivated using biodynamic principles and a minimal-intervention approach in the vineyards.

The Vincey family’s winemaking tradition dates back to the early 20th century. The estate took on its modern identity in 2014, when Florence and Quentin Vincey assumed leadership and began a focused transition toward organic and biodynamic viticulture.

The younger generation of the Vincey family is committed to expressing authentic terroir character. Each parcel is vinified separately, wild yeasts are used, wines are unfiltered, and no chemical treatments are applied in the vineyards.

Wine Style

Domaine Vincey Champagnes are defined by purity, structure, and pronounced minerality. Each cuvée reflects the distinctive character of the Oger terroir, marked by chalky soils that lend saline notes and vibrant acidity.

  • Blanc de Blancs – refined, mineral-driven Champagnes in which Chardonnay reveals floral notes and a precise, saline elegance.
  • Millésime (vintage Champagnes) – concentrated and complex, with aromas of matured citrus, smoke, stone, and buttery brioche, offering excellent aging potential.
  • Wines are aged on lees for 3 to 5 years, gaining depth, texture, and a subtle creamy character.

Domaine Vincey’s vineyards are located entirely within Oger Grand Cru, one of only 17 Grand Cru villages in Champagne, renowned for its exceptional limestone soils.
