Description

One of the benchmark wines of the Cornas AOC, produced exclusively from 'Syrah' grown on the granite terraces of the Chaillot lieu-dit. Compared to the more powerful Reynard, Chaillot places greater emphasis on aromatic precision, minerality and a more refined structure, while retaining the concentration that defines classic Cornas.

The nose opens with aromas of blackberries, blueberries and black cherries, accompanied by notes of violets, black olives, wild herbs, crushed granite and black pepper. With aeration, the wine develops layers of smoke, liquorice and delicate savoury nuances characteristic of traditionally crafted Northern Rhône 'Syrah'.

On the palate, the wine is dense yet remarkably balanced. Concentrated dark fruit is supported by vibrant acidity, exceptionally fine-grained tannins and pronounced mineral tension. The texture is seamless, while the long finish reveals persistent flavours of black berries, spices, graphite and saline mineral notes. Its structure provides the potential for two decades or more of bottle ageing.

The grapes are fermented with whole clusters using indigenous yeasts. The wine is then aged for approximately 24 months in old foudres and used oak barrels before being bottled unfined and unfiltered.

Serving recommendations

Serve at 16–18 °C with tomato-based dishes such as ratatouille; it can also be paired with lamb, venison or beef.

Thierry Allemand – the master of Cornas terroir, shaping the story of Syrah

Thierry Allemand is one of the most renowned producers of the Cornas AOC in the Northern Rhône Valley, France. From the very beginning, his ambition has been to create wines that express the true character of Cornas and its unique terroir. He started his career working in a wine warehouse, gradually acquiring vineyard parcels and patiently building his estate with a clear vision: to let the land speak for itself.

His wines come from small, carefully tended plots, each with its own personality — from Les Chaillots to Reynard. Some of these cuvées are produced in extremely limited quantities, often only a few hundred bottles per year, which has made them highly sought after by collectors worldwide.

Allemand’s winemaking philosophy is rooted in natural expression and minimal intervention. Fermentation is carried out with native yeasts, often using whole clusters, and with as little mechanical manipulation as possible. Sulphur is used sparingly, and the wines are aged for 18 to 24 months, depending on the vintage, primarily in old, neutral oak barrels.

After aging, the wines are bottled unfiltered, preserving their purity and structure. This approach results in wines of remarkable finesse, defined by mineral tension, depth, and an exceptionally pure expression of Syrah. Aromatically, they move from dark berries and black pepper to earthy, savory notes that evolve beautifully with time.

Today, Thierry Allemand is regarded not merely as a producer, but as one of the defining voices of Cornas. His work has influenced an entire generation of winemakers and stands as a benchmark for how tradition, restraint, and terroir-driven philosophy can create modern wines with profound depth and longevity.
