This appellation permits the use of 13 grape varieties (or 18 if counting different color mutations). However, the vast majority of red wines are Grenache-based, often blended with Syrah and Mourvèdre. Traditional styles offer pronounced earthy, spicy, and baked fruit aromas, while modern versions lean towards vibrant fruitiness and softer tannins.
The powerful and full-bodied Châteauneuf-du-Pape demands bold, intense dishes. It is an ideal partner for game meats, slow-braised beef, roasted lamb with rosemary, or aged hard cheeses.
These are incredibly age-worthy wines. Bottles from top vintages can age beautifully in a cellar for 10, 15, or 20 years. If you plan to drink a young vintage (under 5 years), be sure to decant it for at least 1–2 hours before serving to help the wine open up and soften its tannins.
