"Blanchots" is one of the most elegant and floral "Chablis Grand Cru" vineyards, distinguished by its unique morning sun exposure and white Kimmeridgian limestone soil. Although it is a powerful and age-worthy Grand Cru wine, by its nature, it demonstrates incredible subtlety and refinement.
In the glass, an exceptionally pure and elegant aromatic bouquet immediately unfolds. White peaches, green apples, and spring blossoms (acacia) dominate, complemented by bright notes of flint and crushed stone. In the background, there is a subtle touch of toasted almonds, stemming from masterful and highly careful aging in oak barrels.
On the palate, the wine boasts a silky texture and pulsating energy. The acidity is incredibly lively and precise, characteristic of the highest-tier Chardonnay wines from the Chablis region. The 2023 vintage gives the wine a juicy mid-palate, beautifully intertwining the freshness of white fruits with a deep minerality. It is a wine of incredible harmony and a long, fresh finish.
Serve at 10–12 °C with a creamy sauce flavored with snails, oysters, shellfish, fatty fish, or poultry.
