Description

Bourgogne Côte d'Or “Chardonnay”, where a regional appellation takes on a distinct Côte de Beaune character. The wine is produced from ‘Chardonnay’ grapes grown on clay and limestone soils, primarily around Puligny-Montrachet, resulting in fresh acidity, pronounced minerality, and expressive fruit.

The aroma reveals notes of lime, pear, and white peach, complemented by white flowers and subtle hints of citrus zest. In the glass, the wine remains pure and vibrant, with delicate chalky and mineral nuances adding further complexity.

On the palate, the wine is fresh and precise. Vibrant acidity provides tension, while ripe white fruit is harmoniously balanced by a mineral character and a clean, refreshing finish. This is a classic Côte d'Or Chardonnay, where purity of fruit and balance take centre stage.

The grapes are grown on clay and limestone soils. At Domaine François Carillon, the soils are cultivated mechanically, herbicides are not used, and each parcel is managed individually to preserve its unique terroir expression.

Alcoholic and malolactic fermentation take place in French oak barrels. The wine is aged for approximately 12 months in barrel, around 15% of which are new, followed by a further two months in tank before bottling.

Serving recommendations

Serve at 10–12 °C; pairs well with steamed mussels, lemon risotto with asparagus, and fresh goat cheese.

About brand

Domaine François Carillon is one of the families continuing the winemaking traditions of Puligny-Montrachet, with a history in the region dating back to the 16th century. François Carillon represents the eleventh generation of the winemaking family and founded his own estate in 2010 following the division of the family domaine. From the beginning, his approach has been clear – to create wines that express the individual character of each Burgundy vineyard site as precisely as possible.

Today, Domaine François Carillon manages around 16 hectares of vineyards in the Côte de Beaune region, mainly across Puligny-Montrachet, Chassagne-Montrachet, and Saint-Aubin. The estate is primarily focused on ‘Chardonnay’, with a portfolio covering regional, village, and Premier Cru appellations. Among the most important are Puligny-Montrachet, Puligny-Montrachet Premier Cru “Champ Canet”, “Les Perrières”, “Les Referts”, as well as other historic lieux-dits.

François Carillon’s viticultural philosophy is based on respect for the soil and the natural balance of the vineyard. Herbicides have not been used at the estate since 1992, the soils are worked mechanically, and each parcel is managed individually according to its exposure, soil composition, and vine condition. The aim is not maximum yields, but healthy grapes capable of expressing the character of their terroir.

In winemaking, François Carillon seeks to maintain a balance between Burgundy traditions and a pure expression of fruit. ‘Chardonnay’ is fermented and aged in French oak barrels, but oak influence is used with restraint to ensure it does not overshadow the minerality and identity of each vineyard site. Ageing on lees adds texture to the wines, while extended maturation before bottling helps preserve structure and harmony.

Today, Domaine François Carillon is recognised for its precise and restrained Puligny-Montrachet style – wines where the focus is not on power, but on elegance, minerality, and a clear expression of the character of each individual site.
