The grapes for this wine are harvested from 60-year-old vines, after being lightly dried on the trees, so the yield is very small but concentrated. At the winery they are sorted once again and gently pressed. Maceration lasts from 2 to 3 weeks. The wine is fermented in steel tanks. It is then aged for 9 months — 50% in new and 50% in second-use French oak barrels — and a further 9 months in the bottle. Rich aromas of ripe blackcurrants, tobacco, dark chocolate, and cherry jam. On the palate it is concentrated and intense, with soft acidity and silky tannins.
Serve at 16–18 °C with grilled game, beef roasts, red meat stews with wild mushrooms, or mature cheeses.
A very intensely fruity wine with a layered profile, from sweet blackcurrants to smashed roses, black cherries and a whiff of spiciness. The palate is dry to off-dry, full-bodied, soft and smooth. It has a leesy drinkability for its lushness and moderate acidity. Polished yet warming finish. Drink or hold.
