Red dry
A classic Côte de Beaune “Pinot Noir” interpretation, based on a blend of several Volnay parcels. The wine reflects the traditional style of the domaine: aromatic precision, refined texture and structure that comes not from extraction, but from the natural character of the terroir.
On the nose, it reveals notes of cherries, raspberries and wild strawberries, complemented by violet flowers, subtle spices, forest floor and delicate earthy nuances. With time in the glass, additional complexity develops, showing hints of dried herbs and spices.
On the palate, the wine displays typical Volnay elegance: a medium-bodied structure, soft tannins and vibrant acidity. The red fruit character is supported by a subtle mineral tension, while the finish retains delicate spicy and earthy notes.
The grapes come from several lieux-dits within the Volnay appellation, where clay and limestone soils dominate. The combination of parcels with different exposures brings balance between fruit intensity, elegance and structure. Older vines contribute additional concentration and aromatic depth.
Domaine Lucien Boillot follows a traditional Burgundian approach: fermentation takes place with indigenous yeasts, careful grape selection is applied, and the wine is aged in French oak barrels for around 16–18 months, with a restrained use of new oak to preserve the purity of the fruit and the expression of the terroir.
Serve at a temperature of 15–16 °C. Pair with roasted venison, veal cutlets, or braised wild mushrooms.
