Olivier Leflaive's wine comes from one of Saint-Aubin's oldest vineyards, which has become exceptionally popular among white Burgundy enthusiasts over the last decade.
The wine's aroma harmoniously blends licorice and floral notes. The palate offers a rich and saline texture, with subtle hints of camphor and menthol on the finish.
The name "Dents de Chien" translates to "dog's teeth," as the vineyard is nestled beneath sharp, fang-like rocks. The Chardonnay vines planted here are 30 years old and thrive in calcareous clay on a steep slope, which allows for early ripening.
The aging process spans 12 months: for the first 4 months, the wine is kept in stainless steel tanks, and for the remaining time, it matures in French oak barrels (25% new oak).
Serve at 10-12°C. Ideal with crayfish, grilled fish and pike with sauce.
The name "Olivier Leflaive" is very well known to Burgundy lovers. The roots of this family, deeply embedded in the Puligny-Montrachet soil, date back to 1717, but it was not until the 20th century that Joseph Leflaive began actively cultivating the family winery and traditions. His vision was simple but grand – to create top-quality Burgundy wines that would reflect the unique terroir of the region.
His son Olivier, having inherited the family traditions, founded his own estate in 1984, named after himself. This step allowed him to experiment not only with white wines but also with red wines, expanding the family's holdings. In 2010, "Olivier Leflaive" regained its long-cherished vineyards, which had been leased to "Domaine Leflaive" for 18 years. Today, the estate boasts 15 hectares of prestigious vineyards in the Puligny, Chassagne, and Meursault regions.
The year 2023 marks a new chapter in the history of "Olivier Leflaive" – after a long and impressive career, technical director Franck Grux retired. His place was taken by the talented winemaker Solène Panigai, who will undoubtedly continue the traditions of this house and continue to create exceptional Burgundy wines.
