Puligny-Montrachet “Les Aubues” is a village-level Chardonnay produced from a small vineyard parcel located beside the renowned “Les Enseignières”, on the boundary of the Grand Cru “Bâtard-Montrachet”. This site is known for combining the hallmark mineral precision of Puligny-Montrachet with a slightly richer texture.

The aroma reveals notes of lemon zest, white peach, pear, and linden blossom, complemented by chalk, wet stone, and subtle hints of toasted hazelnuts. With time in the glass, the wine gradually develops greater complexity.

On the palate, the wine is concentrated while maintaining an elegant balance. Vibrant acidity and a clear mineral backbone support the ripeness of the white fruit, while the long finish reveals citrus freshness, a subtle saline note, and the tension provided by the limestone soils.

The grapes for “Les Aubues” come from a 0.42-hectare vineyard planted in 1976. At Domaine François Carillon, the soils are cultivated mechanically, herbicides are not used, and each parcel is managed individually to express its terroir as accurately as possible.

Fermentation takes place in French oak barrels, followed by approximately 12 months of ageing in barrel and several additional months in stainless steel tanks before bottling.

Serving recommendations

Serve at a temperature of 11–13 °C; pairs well with grilled eel, an omelet with black truffles, and aged Comté or Beaufort cheeses.

About brand

Domaine François Carillon is one of the families continuing the winemaking traditions of Puligny-Montrachet, with a history in the region dating back to the 16th century. François Carillon represents the eleventh generation of the winemaking family and founded his own estate in 2010 following the division of the family domaine. From the beginning, his approach has been clear – to create wines that express the individual character of each Burgundy vineyard site as precisely as possible.

Today, Domaine François Carillon manages around 16 hectares of vineyards in the Côte de Beaune region, mainly across Puligny-Montrachet, Chassagne-Montrachet, and Saint-Aubin. The estate is primarily focused on ‘Chardonnay’, with a portfolio covering regional, village, and Premier Cru appellations. Among the most important are Puligny-Montrachet, Puligny-Montrachet Premier Cru “Champ Canet”, “Les Perrières”, “Les Referts”, as well as other historic lieux-dits.

François Carillon’s viticultural philosophy is based on respect for the soil and the natural balance of the vineyard. Herbicides have not been used at the estate since 1992, the soils are worked mechanically, and each parcel is managed individually according to its exposure, soil composition, and vine condition. The aim is not maximum yields, but healthy grapes capable of expressing the character of their terroir.

In winemaking, François Carillon seeks to maintain a balance between Burgundy traditions and a pure expression of fruit. ‘Chardonnay’ is fermented and aged in French oak barrels, but oak influence is used with restraint to ensure it does not overshadow the minerality and identity of each vineyard site. Ageing on lees adds texture to the wines, while extended maturation before bottling helps preserve structure and harmony.

Today, Domaine François Carillon is recognised for its precise and restrained Puligny-Montrachet style – wines where the focus is not on power, but on elegance, minerality, and a clear expression of the character of each individual site.
