Description

ADVANCE WINE SALE – PRELIMINARY DATE: MIDDLE OF DECEMBER 2025.

One of the most elegant and sought-after expressions of Puligny-Montrachet, where Hubert Lamy showcases his mastery and refined vision of Burgundy’s white wine style. This wine combines precision, subtle depth, and mineral tension, crafted exclusively from ‘Chardonnay’ grapes grown in the unique “Les Tremblots” parcel. It reflects not only the purity of the terroir but also the distinctive signature of one of the most prominent winemakers of Burgundy’s new generation.

An elegant and expressive white Burgundy, born from the Puligny-Montrachet appellation and the distinctive “Les Tremblots” parcel, where vines are planted at very high density to achieve maximum concentration. Hubert Lamy applies organic viticultural practices, and the wine is fermented with native yeasts and aged in 300 L and 600 L barrels, with only 0–5 % new oak used.

The aroma reveals notes of white peach, brioche, and fresh apple, complemented by a subtle minerality. On the palate, the wine shows a medium body, bright acidity, and a silky yet energetic texture, leading to a long, precise, and mineral-driven finish with saline citrus nuances that perfectly mirror the character of the soil.

The “Les Tremblots” parcel lies in the southern part of the Puligny-Montrachet appellation, at the base of the slope, on limestone and clay soils with scattered stones. These conditions allow the grapes to ripen with precision, preserving freshness and aromatic clarity — hallmarks of the refined Puligny-Montrachet style.

Serving recommendations

Serve at 10–12 °C with seared scallops in beurre blanc sauce, roasted guinea fowl with lemon thyme, or aged Comté cheese.

About brand

Humbert Lamy is a young and rapidly rising Burgundian winemaker based in the village of Saint-Aubin, near Chassagne-Montrachet. Although his first bottles appeared only recently, they immediately caught the attention of both sommeliers and collectors for their precision, clarity of style, and exceptional sensitivity to terroir.
After studying at the Beaune viticulture school and gaining experience in several prestigious domaines, Humbert decided to pursue his own vision – crafting wines that capture the essence of the Saint-Aubin and Chassagne landscapes through classical Burgundian aesthetics combined with a modern, thoughtful approach.

Winemaking Philosophy

At the heart of Humbert Lamy’s philosophy lies respect for terroir and natural balance. His vineyards are farmed using organic and biodynamic methods, with no herbicides or synthetic fertilizers. His goal is not to shape the wine, but to let it speak for itself.
Fermentation is carried out with indigenous yeasts, and oak is used with great restraint – only 15–25 % new barrels, aimed at adding subtle texture rather than overt flavor. Maturation usually lasts 12–18 months, allowing the wines to evolve naturally and unfiltered.

Wine Style

Humbert Lamy’s wines are defined by purity, elegance, and precision.
His white wines, made from ‘Chardonnay’, display crystalline minerality, a gentle creamy texture, floral and citrus aromas, and perfectly integrated oak.
The red wines, produced from ‘Pinot Noir’, reveal a delicate aromatic profile, balancing red-berry freshness, herbal nuances, and silky tannins. These are wines that are pleasurable in their youth, yet possess impressive ageing potential.

Prestigious Vineyards

The domaine cultivates several prestigious parcels in Saint-Aubin, Chassagne-Montrachet, and Puligny-Montrachet, passed down through generations.
Among them stand out:

  • Saint-Aubin 1er Cru En Remilly – an elevated site often described as the most Chassagne-like of the Saint-Aubin crus.

  • Chassagne-Montrachet 1er Cru Les Chaumées – known for imparting structure and longevity to the wines.

  • Puligny-Montrachet Les Trezin – noted for its refined elegance, floral lift, and saline minerality.

  • Bourgogne Blanc Les Charmes – a benchmark expression of the domaine’s signature balance and style.

These vineyards, acquired and tended since the late 19th century, give Humbert Lamy’s wines a distinct terroir identity and the beauty of contrast – from cool, high-altitude slopes to sun-soaked southern exposures.

Ageing and Drinking Window

One of the greatest strengths of Humbert Lamy’s wines lies in their balance between approachability and potential.
Both the white and red wines have a clear, focused style, making them enjoyable when young, yet they continue to develop complexity, depth, and aromatic harmony over five to ten years.
The Premier Cru wines, especially En Remilly and Les Chaumées, show remarkable capacity for ageing while maintaining vibrant acidity and the subtle refinement of classic Burgundy.
