Description

An intense garnet-coloured wine with aromas of sweet oriental spices, roasted cocoa beans, fruit cake, plum sauce, blackberry jam and cured meat. Substantial on the palate, piquant, with a long aftertaste of mint and black pepper.

The wine is made from a single Maroccoli vineyard, growing at around 400 metres above sea level in a wild environment on stony, calcareous soil. Before fermentation, the grape juice is macerated with the skins for 21 days at 25 °C. Fermentation takes place in stainless steel and oak vessels. The wine is aged for 14 months in French Allier oak barrels, 30% of which are new.

Ageing potential - 7/10 years.

Serve at 16–18 °C with smoked meat, fire-roasted suckling pig or game dishes.
