Giustini Calùra Appassimento Rosso Puglia IGP 2024 is a rich, concentrated red wine from Puglia, crafted from three grape varieties typical of Southern Italy: Primitivo, Negroamaro, and Susumaniello. The vineyards are located in the San Giorgio Ionico area of Salento, where the soil has a significant clay content.
The name "Calùra" means "heat," which aptly describes the wine's style: warm, ripe, smooth, and generously fruity.
The *appassimento* method is employed here, but instead of drying the grapes after picking, they are left to wither on the vine for 15–20 days. The stem of the grape cluster is cut, halting the flow of sap to the berries and causing them to gradually lose water. This process concentrates the sugars, color, and aromatic compounds. After harvesting, maceration and alcoholic fermentation take place over 8 days at temperatures between 24°C and 26°C. The wine is subsequently aged for 3 months in French oak barrels.
It displays an intense ruby-red color. The aroma is highly ripe and concentrated, featuring notes of blackberry, ripe dark berries, and strawberry jam, with the fruitiness complemented by hints of cocoa and tobacco.
The palate is rich, rounded, and harmonious, offering a soft, juicy texture and a long, warm finish. The *appassimento* method imbues the wine with a concentrated, ripe-fruit character.
Serve at 14-16°C with pizza, vegetable and meat stews or chocolate desserts.
