White dry
A dry white wine combining refreshing citrus notes, yellow fruit aromas and the characteristic minerality of Chablis. The “Vaillons” vineyard is located on the left bank of the Serein River, where Kimmeridgian marl and clay-limestone soils give the wine structure and an expressive mineral character.
The nose is intense, complex and elegant, revealing fresh yellow fruit and citrus notes. The palate is fresh and vibrant, with lively acidity and pronounced minerality. Citrus flavours lend the wine tension, while the finish is dry, refreshing and long.
The wine is made from 100% ‘Chardonnay’ grapes grown in Kimmeridgian marl and clay-limestone soils rich in ancient marine fossils. The “Vaillons” plot cultivated by “Domaine Servin” covers approximately 2.5 hectares. The vines are 39 years old. Fermentation and ageing take place in stainless-steel tanks.
Serve at 10-12 °C with seafood, oysters, flounder or halibut cream sauce.
Domaine Servin, located in the heart of the Chablis region, boasts a profound history dating back to 1654. From the very beginning, the Servin family has been dedicated to grape growing and winemaking, nurturing the land and perfecting the secrets of this noble craft. Today, the estate owns 32 hectares of vineyards, a significant portion of which are situated in prestigious Premier Cru and Grand Cru plots. Under the leadership of François Servin, the quality of the winery's wines consistently improves each year. He has not only replanted vines with a significantly higher density than is common in the region but has also achieved exceptional grape concentration. In the best plots owned by Domaine Servin, grapes are harvested only by hand, emphasizing precision and attention to detail. François strives to blend traditional and modern winemaking methods, utilizing stainless steel fermentation tanks, yet a portion of his wines carries a subtle "touch" of oak, while almost all Grand Cru wines are fermented in oak barrels.
