Red dry
This wine is born in the Itata Valley, where ungrafted ‘Cinsault’ vines, many of them over a century old, still thrive. These ancient bush-trained vines, grown naturally without human interference, produce a wine that captures the pure essence of the variety – its freshness, transparency, and authentic expression of Chile’s southern coastal terroir.
The aroma reveals layers of redcurrant, raspberry, and cherry, complemented by notes of wildflowers, orange zest, and gentle spice. The bouquet is fresh and elegant, maintaining the signature brightness and delicate minerality typical of Itata wines.
On the palate, the wine is medium-bodied, vibrant, and graceful, with lively acidity and soft, silky tannins. The flavors combine juicy red fruits, hints of dried herbs, and the granite-derived minerality that gives the wine depth and definition. The finish is long and dry, with a refined interplay of berries and subtle spice.
The vines grow on granitic soils, about 20 km from the Pacific Ocean, where the region’s warm days are balanced by cooling coastal winds. These old, ungrafted ‘Cinsault’ vines, planted in the early 20th century, impart a unique authenticity and a fine, nuanced structure to the wine.
Fermentation takes place with wild yeasts in concrete vats, without the use of oak, to preserve the pure expression of terroir.
Serve at 14–16 °C with grilled lamb and pomegranate sauce, Mediterranean vegetable stew with thyme, or Spanish Manchego sheep's milk cheese with olive tapenade.

Aging and Consumption Period
The wines are aged using both modern and traditional technologies, allowing them to maintain their authenticity and emphasize the local terroir. While most De Martino wines are enjoyable upon release, some variations have the potential for long aging, developing even more complex notes.
