A Saint-Émilion wine whose character is shaped above all by the limestone plateau and the distinctive position of its vineyards. The 2023 vintage was warm, with grapes harvested in several stages to preserve the balance between different parcels and grape varieties. On the nose, black cherries, raspberries, plums and blackcurrants are complemented by violet, rose petals, mint, black pepper and subtle chalk and graphite nuances. As the wine opens, the fruit becomes deeper, while the aromatic profile remains clear and precise, with floral and mineral notes retaining their definition.
On the palate, the wine is precise, vibrant and concentrated, yet never heavy. 'Merlot' provides juiciness and texture, while 'Cabernet Franc' adds aromatic tension and tannic structure. Fine, silky tannins combined with bright acidity give the wine a long, linear structure. Here, the limestone is expressed not simply as an abstract “mineral note”, but through texture and freshness – the wine remains taut even with its considerable fruit concentration. The finish is long, dry and mineral, with lingering notes of red and black fruit, violets, pepper and chalk.
The château works with numerous individual parcels, vinifying their grapes separately. This allows the final cuvée to achieve a precise balance of fruit, structure and limestone-driven tension. It is one of the reasons why 'Canon' is defined not simply by power, but by a very clear aromatic and textural architecture.
The wine is aged for approximately 16–18 months in French oak, using both new and previously used barrels as well as larger wooden vessels.

Château Canon is a Premier Grand Cru Classé château in Saint-Émilion, Bordeaux. It owns pockets of vineyards close to Saint-Émilion town, with a large core parcel right on the very edge. This parcel is almost completely walled in and is traditionally hand-harvested and ploughed by horses. It is planted entirely with Merlot. This is regularly used in the Château Canon grand vin, along with a smaller proportion of Cabernet Franc from the estate's various other vineyards. More than 60 percent of Canon's vineyards are planted to Merlot. The remaining is planted to Cabernet Franc. The grapes are blended carefully to get the most from each: Merlot brings smoothness, finesse and intense fruit aromas; while Cabernet Franc brings structure and extra ability to age. The Château also makes the Croix Canon wine from an 11-hectare (27-acre) vineyard that borders the Canon estate. Buyers should be aware of the high number of wines from the Right Bank whose names include the word "Canon". This includes two distinct wines named Château Canon from Canon-Fronsac, one of which has a very similar label to this more famous wine.
