Fortified sweet
An exceptional fortified sweet wine from Roussillon, distinguished by its elegant oxidation, complexity, and remarkable ageing potential. This Ambré-style Vin Doux Naturel perfectly expresses the classic character of Rivesaltes.
The aroma is rich and multi-layered, revealing notes of dried apricots, candied citrus fruits, walnuts, toasted almonds, honey, caramel, and delicate spices (cinnamon, vanilla, and liquorice). On the palate, the wine is full-bodied, silky, and harmonious, with pleasant sweetness beautifully balanced by vibrant acidity. The finish is very long, warm, and elegant, with lingering flavours of dried fruits and nuts.
The wine is made from Grenache Blanc and Grenache Gris grapes harvested at optimal ripeness from biodynamic vineyards in the Agly Valley. After mutage (stopping fermentation with spirit), the wine is aged in oak casks under oxidative conditions, which gives it the characteristic amber colour and complex character. The Dame Jeanne format (large bottle) allows the wine to develop even more slowly and impressively.
Recommended serving temperature: 14–16 °C. This wine pairs perfectly with foie gras with fig jam, blue cheese (such as Roquefort or Gorgonzola), and nut-based desserts (such as walnut tartlets or caramelized apple pie).
Domaine Cazes – Biodynamic Icon of Roussillon from Rivesaltes
Domaine Cazes is one of the most renowned and historic wineries in the Roussillon region, located in Rivesaltes, between the Pyrenees Mountains and the Mediterranean Sea. The estate was founded in 1895 by Michel Cazes. Today, it is a large, dynamic family-owned domaine run by Emmanuel Cazes and Lionel Lavail.
Since 1997, the winery has been transitioning to organic and biodynamic viticulture, and since 2005 the entire 220 hectares have been certified biodynamic. It was one of the first wineries of this scale to adopt biodynamics in southern France.
Terroir and Vineyards Domaine Cazes owns more than 220 hectares of vineyards in the Agly Valley, at the foothills of the Corbières. The soils are varied — clay-limestone with schist and silica stones. The domaine produces wines across all the major appellations of Roussillon:
