Description

A wine whose character is defined above all by the Savagnin grape and its long ageing under a layer of yeast. Rolet uses just 0.35 hectares of the “Puits St Pierre” vineyard for this wine, located directly below the village of Château-Chalon.

At first, aromas of walnut, dried fruit and spices emerge in the glass, gradually joined by notes of mushrooms, dried herbs, curry and saffron. This is a characteristic aromatic profile of Château-Chalon Vin Jaune, developed through long ageing under a layer of yeast.

On the palate, the wine is dry, concentrated and highly structured. Nutty and spicy flavours are supported by pronounced acidity and a mineral texture, while dried fruit, curry and saffron tones emerge towards the finish. The finish is long, dry and spicy. The acidity carries through to the very end, keeping the wine from feeling overly weighty despite its concentration.

The Savagnin wine is aged in oak barrels for at least 6 years and 3 months, without topping up. As the wine evaporates, a layer of yeast known as voile forms on the surface of the wine, protecting it from complete oxidation while also contributing the characteristic nutty and spicy character. Due to the long ageing process, the wine is bottled in the traditional 62 cl clavelin bottle.

Serving recommendations

Serve at 14–16 °C; pairs perfectly with chicken in a cream sauce, aged Comté cheese, and creamy risotto with wild mushrooms.

About brand

Domaine Rolet was founded in 1942 by Désiré Rolet before being passed on to his children. Today, the Domaine's vines average 45 years old and span 65ha across the Jura region of Eastern France, with vineyards in the AOCs of Arbois, Cotes du Jura, l'Etoile, and Chateau-Chalon.Classic Jura varieties are planted across steep slopes on appropriate soils; Chardonnay (light marls), Savagnin (grey marls), Poulsard (red & blue marls), Trousseau (heavy gravels) and Pinot Noir (light marls). Vines are tended through organic farming practices, and hand-harvested each year producing yields between 15-50 hl. Further sorting ensures that only the best quality grapes are seen through to barrel. Most wines are aged for around 18 months in oak, replacing a quarter of their barrels each year.The resulting wines have gained the Domaine a reputation for excellence with wine professionals and drinkers alike with their purity and concentration.
