Description

In the village of Chavignol, the soil of the hills and ridges is dominated by clay and limestone bedrock. The vineyards in this area produce berries marked by fruitiness and aromas of white flowers and citrus fruits.

To preserve an elegant aromatic palette, the grape juice is fermented in stainless steel tanks. Before bottling, the wine is aged for a further 5 months on the lees.

A pale citrus-coloured wine with an elegant yet intense aroma, revealing notes of lemon, mango, freshly cut grass and gooseberry leaves. On the palate — dry, with refreshing acidity, medium-bodied, fairly intense in flavour and a long mineral finish.

Serving recommendations

Serve at 10–12 °C with baked halibut steak in caper sauce, soft cheeses or fresh vegetable salad. The classic pairing for this wine is Crottin goat cheese from the town of Chavignol, both fresh and firmer, more mature styles.
