Pago Ayles Cuesta del Herrero Vino de Pago BIO 2023 - organic red dry wine from the Vino de Pago Aylés farm in Aragon, in the Mezalocha (Zaragoza) area.

Introduction
The name "Cuesta del Herrero" is associated with a specific vineyard, and the style of the wine is clearly of the "pago" type: fruitiness and freshness are maintained, but the structure is deeper due to the mixture of oak and grapes.

Aroma
The aroma is dominated by ripe red and darker berries, spices, a little "ink" (a darker, mineral-phenolic nuance) and a brighter floral note, which gives the wine freshness and elegance.

Taste
In the mouth, the wine is harmonious, with medium body, medium intensity of tannins and a "richer", slightly smooth texture. The aftertaste remains fruity and spicy, without excessive sweetness, as the acid and tannins hold the structure.

Winemaking and aging
Fermentation was carried out under temperature control and using local yeasts; Merlot and Tempranillo were fermented together, as were Garnacha and Cabernet Sauvignon. Malolactic fermentation took place in French oak barrels, where the wine spent a total of about 10 months.

Serving recommendations

Serve at 16 - 18 °C with various meat dishes, pasta with meat sauce, tapas, octopus, and hard mature cheeses.

Bodega Pago Aylés is located in northeastern Spain, near the city of Zaragoza, midway between Madrid and Barcelona. Ramón Reula's family wine project began in the 1980s. At that time, it became one of the largest private historical estates in Aragon (3,200 hectares).
